Private Chocolate & Caramel Workshop
You will be warmly welcomed in the workshop on the rue de Rivoli by an enthusiastic team who will guide you throughout this adventure full of flavor. During this chocolate workshop, you will have the chance to work with the same equipment and ingredients as professional chocolatiers. In a confidential format, alone or with your friends and family only, you will learn step-by-step how to make delicious chocolate half-spheres filled with melting caramel. With or without fleur de sel de Guérande, you will choose between a salted or perfectly sweet caramel.

Guided mystery tour of the Opéra Garnier After-Hours
Unveil all the secrets of the Paris Opera in this tour outside of opening hours for the general public. In a cozy atmosphere, discover or rediscover a place out of time. The Opéra Garnier, with its fresco by Chagall, balconies, red velvet seats, and orchestra, is a must-see monument in Paris. But like any must-see, there are often many visitors. To remedy this, you experience a guided tour of the Opera after it is closed to the public. In an intimate atmosphere and an exclusive guided tour, discover this place of history and music, a symbol of the French capital.

Moulin Rouge Evening Show
As night falls, experience the mesmerizing world of the Moulin Rouge. Situated in the vibrant Montmartre district of Paris, the iconic cabaret and entertainment venue has captivated audiences since its establishment in 1889. It has become synonymous with the bohemian spirit of Parisian nightlife. Accompanied by champagne, enjoy the incredible show starting at 9 pm.
Reservations must be booked at least 75 days in advance of travel. Blackout Dates: December 21- January 2. Subject to availability. Other blackout dates may apply.

Conduct the Symphony!
Have you ever wondered what it looks like from Maestro Figueroa’s podium? Wonder no more!
You can conduct The Santa Fe Symphony!
You will conduct a seasonal musical selection at The Symphony’s December 7, 2025, Sounds of the Season concert at The Lensic Performing Arts Center. You and Music Director, Guillermo Figueroa, will mutually decide upon the piece.
- Your Sounds of the Season selection will be six to eight minutes in length.
- You will receive conducting lessons from Guillermo Figueroa. Lessons will take place between mid-November and the concert, at a mutually agreed upon time with Maestro Figueroa.
- You will receive a conductor’s score and recording of the selection with which to practice, in addition to a baton.

Gourmets and wine buffs descend on this hidden Tuscan Valley to enjoy local specialties. The Garfagnana Valley is famous for its prosciutto, pork, pecorino cheese, and honey. The area also boasts beautiful areas for walking, hiking, and biking so you can work up an appetite in between meals.
Pisa, Florence, and Cinque Terra are reachable by car or train, and day trips are not to be missed. Cinque Terra, a 5-mile stretch of breathtaking rocky coast at the border of Tuscany and Liguria, was declared a National Park in 1999 and has been protected by UNESCO as a unique natural environment since 1997. Walk along the winding paths that overlook enchanting beaches and bays and admire the hundreds of miles of walls and man-made terraces to cultivate vineyards that cling steeply to the cliffs, making this region a true masterpiece where the work of man and natural beauty found an ideal balance.

Enjoy a 2-night stay in a superior double room (one queen bed or two twin beds) including daily buffet breakfast for two, subject to availability. Guest rooms overlook either the charming courtyard or the garden of the historic Palazzo Spada. For your convenience, you may wish to split your stay, so you have one night at the beginning of your trip and one night at the end in Rome.

You’ll cook with Chef Rodolfo as he shares the secrets of Tuscan cuisine with you – including how to make fresh homemade pasta!
Located in the beautiful rolling hills just minutes from the medieval walled city of Lucca, Fattoria Colleverde is a half-hour drive from Pisa and an hour drive from Florence and Cinque Terre. Beautiful vineyards and olive groves lie within a wide, south-facing valley. This natural amphitheater of terraces creates an extremely well-balanced and unique agricultural ecosystem that produces flavors that are full and rich.
